The Role of Sous Chef
As Sous Chef you will be assisting the Head Chef in his duties and management of the kitchen production and personnel in the Head Chef's absence. Responsibilities will include:

* Assisting the Head Chef in managing kitchen production ensuring quality and consistency every time, in line with the company guidelines
* To be involved with the successful mobilisation of new procedures and systems in the new kitchen
* Managing kitchen personnel and kitchen personnel issues in the Head Chefs absence and report back to the Head Chef
* Exercising company Food Safety and Health and Safety policies
* Taking a "hands-on" approach in assisting with, monitoring and overseeing all production, stock and operational kitchen related concerns
* Controlling and to minimalise all kitchen associated costs without detriment to the business or service
* Assisting all other company departments where necessary

This role is mainly based in Bicester but you may be required to travel extensively as occasional off site production will be required.

Key Duties as Sous Chef
* Working with the Head Chef in overseeing and managing the chef brigade and kitchen porters to ensure smooth operation
* Leading the brigade in a proactive and motivational manner in the absence of the Head Chef
* Ensuring that the food sent to every client is of the highest possible standard
* Delegate daily work load and responsibilities in the Head Chefs absence
* Ensuring that all food is prepared, produced and packed on time
* Leading by example in "being hands on" with food preparation and production
* Monitor and manage systems and process to aid the production processes
* To assist in standardising menus and food items
* Encourage employee interaction between all departments
* Assist in recruitment, training, development and assessment of kitchen brigade
* Carry out all food procurement, stock inwards, stock management and minimalise wastage
* Train the kitchen brigade to deliver consistent quality and portion control every time.
* Assist the Head Chef in ensuring that all legislative and Government guidelines are adhered to including The Food Safety Act, Health & Safety at Work Act, COSHH and Fire Regulations
* Ensure that all production and associated areas are tidy, clean and hygienic at all times, installing a "clean as you go" practise.
* Assist in managing and monitor daily and weekly cleaning duties
* Consider and assist where necessary other company departments
* Any other reasonable duties as requested by management from time to time
* To be conversant with all company codes of conduct

The Person
The successful Sous Chef will have:
* Previous Senior CDP or Sous Chef experience
* A strong team player attitude
* A proactive work ethic
* Confidence in a busy and large kitchen
* Proven understanding of Food Safety Standards with Level 2 Food Hygiene

For the role of Sous Chef there is a salary on offer of £30,000 to £32,000 pe annum
